Thai Basil Fried Rice

This is my favorite Thai fried-rice.  It's spicy and really flavorful.  I love how the Thai basil just enhance the taste and the smell of the food.  Again this dish can be vegetarian or you can choose your choice of meat.  If you don't like your food spicy just add less Thai chili or less chili paste oil.


Spicy Thai Basil Fried-Rice


Ingredients:

  • 2-3 tbsp cooking oil
  • about 200 grams of any meat of your choice
  • 3-4 cups of cooked rice
  • 1-2 eggs depends on size
  • 5-10 Thai basil leaves
  • 3-4 clove of chopped garlic
  • 3-5 chopped Thai chili
  • 1/2-1tbsp Thai chili paste oil
  • 1 cup of frozen mixed vegetable (optional)
  • 1/2 yellow onion cut smaller pieces (optional)
  • 1/2 green pepper cut smaller pieces
  • 1/2 red pepper cut smaller pieces
  • 1-2 tbsp fish sauce
  • 1/2-1tbsp oyster sauce
  • 1-2tbsp of soy sauce
  • 1/2tbsp sugar (optional)


Instructions:

Step 1:  At medium-high heat, add cooking oil into a wok. When the oil is hot, add garlic and Thai chili, stirred until the garlic is golden or brown but not burnt then add the meat your chosen.

Step 2:  Stirred until the meat is cook, then add the eggs, followed with the vegetables. Mixed it all together until the vegetable is almost cook.

Step 3:  Add the rice, followed with all the sauces.  Start mixing until all the ingredients are well blended together for about 2-3 minutes.

Step 4:  Add the Thai basil and give it a taste.  If it's not as flavorful as you would like it to be, you may add more sauce at time.

Step 5:  You may garnish it with cucumber and some cilantro for presentation.

Thai Pineapple Fried-Rice

For this dish you can used any meat of your choice or it can be vegetarian.  I will be using prawns, it's easier to prep.  For pineapple you can either used fresh or canned pineapple.  Make sure they are cut into small bite size. 

Ingredients:
  • 3-4 cups of cooked rice
  • 10-15 prawns depends on size
  • 2-3 tbsp of cooking oil
  • 1-2 eggs depends on size
  • 3-5 clove of chopped garlic
  • 1/2-1tbsp of oyster sauce
  • 1tbsp of soy sauce
  • 1tbsp of fish sauce
  • 1/2tbsp of curry power
  • 5-10 pieces of pineapple
  • 1 cup frozen mixed green vegetable
  • 1/2 yellow onion chopped (optional)

Let's get started:

Step 1: Add oil into a wok at medium-high heat, wait till hot then add garlic. Give it a little stirred then add your choice of meat and your egg(s).

Step 2: Add your frozen vegetable mixed it together with the egg(s) and the choice of meat you chose.

Step 3: Add the cooked steam rice, followed with the pineapple, the all sauces and the curry power.

Step 4: Stirred and mixed all the ingredients with all the sauces.

Step 5: Taste your food to make sure it is to your liking. You may add additional sauce if needed and garnished with cilantro or cashew nuts if you like.
